Core Functions

α-1,6-Glycosidic Bond Hydrolysis‌: Cleaves branch points in amylopectin/glycogen to produce linear dextrins. Short-Chain Specificity‌: Degrades side chains as short as maltotriose (2-3 glucose units).

‌3. TECHNICAL PARAMETERS/MECHANISM

 

Mechanism of Action

 As an ‌α-1,6-glucanase‌, pullulanase:

Recognizes branch points via conserved Asp/Glu residues.

Hydrolyzes α-1,6 linkages in pullulan (linear α-1,6-linked maltotriose polymer), then amylopectin/glycogen.

Releases linear oligosaccharides for further digestion by other amylases.
