Bromelain is a thiol proteinase, i.e. it contains in the active center highly reactive cysteine groups that is essential for its function. This enzyme hydrolyzes high molecular proteins into easily absorbable small peptides and amino acids.
The product is a plant protease preparation extracted and purified from the skin, flesh, or/and stem of the pineapple. It catalyzes the hydrolysis of protein into low molecular peptides and amino acids, which can be used in food industry, health product, pharmaceutical and cosmetic industry.
