Definition:
An exo-acting glycoside hydrolase (EC 3.2.1.2) that releases maltose from starch non-reducing ends. Terminal product: ≥85% maltose + trace glucose.
Properties: Plant-derived (>95% purity), heat-tolerant (active ≤65°C), odorless.
Applications:
Sugar Industry: Production of high-maltose syrup (DE ≥50%) and crystalline maltitol.
Beverages: Maltose substrate for brewing/vinification.
