Definition:
Neutral cellulase (EC 3.2.1.4; CAS 9012-54-8) is a multi-component enzyme system that synergistically hydrolyzes cellulose and its derivatives into glucose. It comprises endoglucanases (disrupting crystalline cellulose), exoglucanases (releasing cellobiose), and β-glucosidases (converting cellobiose to glucose).
